A skin contact Chardonnay pét nat! The vines were sourced from Seneca Lake, and farmed without pesticides or herbicides of any kind. 70% of the juice spends time on the skins, and the other 30% is direct press, yielding a fresh, snappy orange bubbly. Fermented without any yeasts, unfined and unfiltered - with no additional sulfur.

Barbichette Wines is a collaborative project between César Vega (Café Integral), Nick Korbee (Egg Shop NYC), and Caleb Ganzer.
The team is all about experimental vinification processes, and seeing what happens when a somm, a coffee wizard, and a chef get together and make wine.
